Life will throw you challenges and at times you may feel overwhelmed to the point of breaking, but when that time comes remember this: NEVER GIVE UP! We are filled with an amazing and vast reserve of potential and ability to create the lives that we want, but often come up short because we allow fear and doubt to enter into our thoughts. We fail to see the greatness within ourselves and in doing so it is as if we were dousing the very light within that leads the way to the door to our achievements. HOLD ON! Persist in spite of what the world may tell you that you lack, for it is quite often those who throw themselves wholeheartedly without signs of ever-giving in who manage to reach their goals. You don’t need to be the most talented, have the most resources or even know the most…if you just continue to pursuit your goal by fully putting your belief behind it and take the actions needed to compliment that belief guess what… YOU WILL ACCOMPLISH IT! ❤

Overthinking Kills Your Happiness

There is nothing that will kill your happiness quicker than overthinking. Now don’t take this to mean that all thinking should cease…for one: it would be impossible to do so; and two: thinking is advisable if you plan on staying alive for long. It is the ‘over’ part that can end up creating problems where none exist. Learn to take things in as they are and if they are good enjoy them as they are without having to puzzle out every little detail…live in there moment. If they are bad, yes take a moment to reflect, but let it be just that…a moment to reflect and then let it go because whether it seems like it or not things won’t stay bad forever and harping on it will only make things worse by getting you stuck in a negative space. The quicker you can pull yourself away from the bad, the quicker you will be able to move into finding a solution. So do yourself a favor and STOP OVERTHINKING!! Trust me it will make a big difference in the levels of happiness you experience!

Our lives are not set in stone…we are constantly in a state of change, so why would you doubt the ability you possess to change your life? Nothing in life remains stagnant! Even the things we consider to be never changing undergo the effects of time and change. In fact change can be said to be the one thing in our lives that is guaranteed. What that will mean in your life is completely up to YOU. Change can be for the better or the worse, but the choice will always lie with you. If your life is headed in a direction that you don’t like: CHANGE IT! People will say, “Easier said then done,” well, you know what…all that comes easy, leaves just as easily! If you are not willing to work for it, then can you really sit back and complain? You want it, go out and do it! It’s never too late when you’re willing to do what it takes!

Parmesan Crusted Baked Tilapia

I love meat and chicken as much as the next gal, but every once in a while I have a serious desire to partake of some delicious fish. As much as I love it though, I was always under the impression that it required immense skill to make a fish dish without screwing it up. However, much to my delight, there are a host of recipes that are both simple and tasty without a whole lot of hassle! As always, whenever I find something great, especially when it has to do with food, I have to simply share it 🙂

What you’ll need:

cooking spray for baking dish

3⁄4 cup plain bread crumbs

1⁄4 cup grated parmesan cheese
1⁄4 teaspoon ground thyme
1⁄4 teaspoon onion powder
1⁄8 teaspoon paprika
3⁄4 cup non-fat or 1% milk
 Tilapia fillets, about 2 pounds

Now what? 

  1. Preheat oven to 500 degrees F. Spray or lightly oil the bottom of a baking dish or tray that will hold the fish in a single layer.
  2. Mix together the bread crumbs, Parmesan cheese, thyme, onion powder, and paprika. Place the crumb mixture on a large flat plate or sheet of wax paper.
  3. Dip the fish fillets in milk then press into the crumb mixture to coat all sides. Discard leftover bread crumbs and milk.
  4. Place fish in baking dish or tray and bake on top rack of the oven until the fish is opaque and flakes easily in the thickest part, about 15 minutes depending on thickness of fish.

       Voila!

You’re done! Seriously, that’s all there is to it. You have official made a delicious fish diner that your family will love. you can accompany your tilapia with some brown rice and steamed or sautéed veggies for a healthy nutritious meal. Or if your feeling up to another little gem, you can try out some mac & cheese style cauliflower as I did below.

Mac & Cheese Cauliflower :

“Did I just read ‘Mac & Cheese Cauliflower?” Yes you did! I don’t know about you guys, but I’ve always loved a good bowl of mac and cheese, so when I came across the notion of a mac and cheese styled cauliflower dish it was a no-brainer for me. Why? Well, beside the yum factor, cauliflower is actually a pretty amazing vegetable. Cauliflower is a member of the cancer-fighting cruciferous family of vegetables. How does it do this? It contains sulforaphane, a sulfur compound that has been shown to kill cancer stem cells, thereby slowing tumor growth. This is huge, as researchers believe that eliminating cancer stem cells may be key to controlling cancer.

In addition, cauliflower is anti-inflammatory and antioxidant-rich, and may boost both your heart and brain health.  If that wasn’t enough to get you running to go grab some cauliflower, eating cauliflower will also provide your body with impressive amounts of vitamin C, vitamin k, beta-carotene, and much more while supporting healthy digestion and detoxification. Can you say Ah-maz-ing!!!

This recipe has quickly become a favorite at my house and for good reason: It’s absolutely DELICIOUS! This mac and cheese style cauliflower is sure to be a hit around your dinner table and it’s super easy! Hope you guys enjoy it as much when you try it!

1 large head cauliflower (1 ½ lb.), cut into medium florets (8 cups)

2 Tbs. butter or margarine

3 Tbs. all-purpose flour

2 cups low-fat milk

1 clove garlic, minced (1 tsp.)

2 cups grated extra-sharp Cheddar cheese

1 pinch cayenne pepper

2 egg yolks

1 ½ cups fresh breadcrumbs

1. Start by preheating your oven to 350°F. Fill a large pot with salted water and set to boil. Once the water is boiling, add cauliflower florets and boil 5 to 7 minutes or until just tender. Drain, reserving 1 cup cooking liquid, and set aside. (see picture below)

2. Melt butter in same pot over medium heat. Whisk in flour, and cook 1 minute, stirring constantly. Whisk in milk, garlic, and reserved cooking liquid, and cook 7 to 10 minutes, or until sauce is thickened, whisking constantly. Remove from heat, and stir in cheese, cayenne pepper, and egg yolks until cheese is melted. Fold in cauliflower.

3. Coat 13- x 9-inch baking dish with cooking spray. Spread cauliflower mixture in baking dish, and sprinkle with breadcrumbs. Spray breadcrumbs with cooking spray. Bake 30 minutes, or until casserole is hot and bubbly and breadcrumbs are crisp and brown.

Then all that’s left to do is serve it up! It is great all on its own or you can have it as a side dish as I did and you can see below.

This is truly one of those quotes that always hits the mark for me when I read it and gets me back on track. It’s simply beautiful in it’s simplicity and truth. If you want to be inspired,  start working on something. It is in the act of trying new and different things that inspiration often strikes like a bolt of lightening. However, if you simply sit sulking hoping that it will simply appear out of thin air…I hate to break it to you but you’ll be waiting for a long time. The Law of Attraction dictates that you attract what you put out. If you are asking for inspiration but your actions don’t reflect it, guess what…it won’t happen! It’s like expecting to win the lottery, but not going out and buying a ticket. So if you’re looking to come up with the next big thing then get on it and start actually hashing out ideas, instead of sitting on the couch waiting for it to fall in your lap!

A Battle You Know Nothing About

We are often quick to judge and treat others ill without knowing  what that person may be dealing with in their lives. Instead of passing judgement swiftly and harshly, take a moment to try to put yourself in the other person’s shoes. Even though some people may paint the picture of perfection, unless you were to walk in that person’s shoes you’d really have no idea whether it is all for show or not. We live in a world where social media has created an outlet by which people give off the impression they wish for others to see, but this does not mean that it is in fact a true one. So next time you think of how bitchy someone may be or angry, sour, miserable or just plain nasty…take a breath and offer your kindness instead for they may be in more need than even they know.
